Are you rushing out of the door in the morning, with no time for breakfast? STOP!! You can’t start your day on an empty stomach. Hunger can make you distracted, cranky and can actually cause you to gain to weight. A quick, easy and healthy breakfast I like to eat when I am rushing is Avocado Breakfast Toast.
Savory avocado breakfast toast is made with whole wheat bread, avocado and a sprinkle of salt. Super food avocado packs quite a punch of nutrients in a little package. “Avocados contribute nearly 20 vitamins, minerals and phytonutrients, including 6% of the recommended Daily Value (DV) for vitamin E, 4% vitamin C, 10% folate, 11% fiber, 2% iron, 6% potassium and 136 micrograms of lutein per 50g serving.1 The whole wheat bread delivers “whole grains (which) are packed with nutrients, including protein, fiber, B vitamins, antioxidants, and trace minerals (iron, zinc, copper, and magnesium). A diet rich in whole grains has been shown to reduce the risk of heart disease, type 2 diabetes, obesity, and some forms of cancer.”2
The limited ingredients in this recipe is a change from the foodie culture that is taking over, but the simplicity of this is part of the reason I love it. You don’t need a ton of ingredients or a fancy pot to make a delicious and nutritious breakfast. Sometimes you just need bread, an avocado, a toaster and some salt.
